A Healthy New Twist For Pizza Lovers

Pizza is one of our favorite eats. But sometimes we crave all the great flavors of pizza without the carbohydrate load that comes from a flour-based crust. So we discovered this delicious recipe using a surprising replacement - cauliflower! Surprised? So were we, especially when we tasted these delicious personal-sized pies with all the satisfying pizza taste we craved. They take about 15 minutes to prepare and about 15-20 minutes to cook so in less than the time it takes to get a pie delivered, you can have these babies fresh-baked out of your oven. Cauliflower Crusted Pizzas

To make 6 personal-sized pizzas

Ingredients for Crusts

1 small or 1/2 larger cauliflower
1 extra large or 2 regular eggs
3-4 cups shredded part-skim mozzarella cheese
1/2 teaspoon each dried oregano and dried basil
1 teaspoon granulated garlic
1 cup pizza sauce (purchase your favorite brand or make our easy recipe below)
fresh basil leaves
large tomato, sliced whole into thin disks
1/2 cup fresh Parmesan cheese, shaved
other pizza toppings as desired

Ingredients for Pizza Sauce

1 small can tomato paste (6 oz.)
1 small can or 1/2 regular can tomato sauce (about 8 oz.)
1 teaspoon granulated garlic
1/2 teaspoon onion powder
2 teaspoons sugar
1/2 teaspoon each dried oregano and dried basil

Directions for Sauce

1. Combine tomato paste and tomato sauce and blend well.
2. Add granulated garlic, onion powder and sugar until combined.
3. Stir in the remaining herbs and mix until thoroughly combined.

*Note: If you have some extra time and want to ripen the sauce, simmer on low for about 30 minutes before using. You can also do this the day before you want to make the pizzas.

Directions for Crusts & Pizzas

Preheat Oven to 450°F. Grease a baking sheet with nonstick spray or vegetable oil.

1. Grate cauliflower in food processor or with hand grater until crumbly. You need about 3 cups.
2. Heat the cauliflower in the microwave or nonstick skillet for 8-10 minutes until soft. Then cool for 10 minutes.
3. When cauliflower is cool, combine with eggs, 2 cups of shredded mozzarella, garlic powder, and dried herbs.
4. Separate into 6 medium size balls and place on baking sheet, evenly spaced.
5. Flatten each into a disk, about 1/4 inch thick, not touching each other.
6. Bake in oven for 15 minutes or until golden brown. The edges will get dark and crunchy.
7. Top with sauce first, then remaining mozzarella, fresh basil, tomato slices and Parmesan. Add other ingredients, like sliced mushrooms, olives, etc. if you like.
8. Place under broiler until cheese is melted and other toppings slightly toasted, just a few minutes. Cool for about 5 minutes and enjoy!

These are great on their own or you can serve them with a green salad or nice minestrone soup. Add a favorite libation, such as a nice Chianti and you're in pizza heaven.
